One of our favorite quick and easy recipes using Jiffy corn muffin mix is Mini Corndogs. Here’s how:
Whip up a batch of the corn muffin mix batter (as listed on the package). Pour one Tbsp. of the batter into individual mini muffin tins. Slice up approximately 5 hotdogs (I use the cheese filled variety) into bite size pieces (1-inch sections).
Place one 1-inch hotdog piece into the middle of each muffin tin that has been pre-filled with the muffin mix batter. Bake until lightly golden brown at the recommended oven temperature listed on the Jiffy corn muffin mix box. This makes approximately 20-22 mini corndogs.
