Getting kids to eat fresh vegetables or vegetables in general can be a real challenge.
Honestly, getting some adults to eat veggies can be a challenge as well. At least it’s that way in my home. Even my hubby dislikes many vegetables and so when it comes to cooking, I have a much harder time trying to please everyone.
I, on the other hand, LOVE vegetables — the more the merrier! Bring ‘em on baby! hehee.
I actually prefer and only purchase fresh and frozen veggies rather than going for canned. In my opinion, canned vegetables have a metallic aftertaste that is quite a turnoff. Not to mention the fact that they’re typically packed with water and salt. Who needs extra salt? Blah!
One way I know I can get my family to eat their vegetables is by incorporating them into meals either cut up into tiny little bits so they aren’t noticeable or by including ingredients I know they love such as cheeses, pasta, and or butter flavored spread. Ah yes, melted butter. Even I can’t resist that!
My all time favorite butter flavored spread is Country Crock. It’s so rich and creamy and full of flavor. Plus, it melts so easily and spreads so well on bread, even the softest bread without tearing it up. It’s perfect!

Part of our shopping trip included using the aisle assignment cards which pertained to finding particular veggies that were purple, or those that are good for your eyes. Something else we were asked to do is select a recipe from the recipe cards included in our kit and shop for the veggie ingredients using the vegetable list. For each item we bought, we were to use the crayons and color in each one.
The recipe I selected for my family was the Broccoli Rice Pilaf. It sounded really tasty! You can view the entire recipe below:
What I love about this recipe besides the yummy taste, is that it contains just 6 ingredients and each one is really healthy. They are also items that I would normally have in my home anyway so whenever I choose to make it again, I won’t have to make an extra trip to a specialty store in order to get them.
